  1. What type/cuts of game do you sell? What tends to be the most popular venison, partridge, and pheasant?
    We sell Pheasant, venison, pigeon, rabbit, Guinea fowl, wild boar etc The most popular is definitively Northumbrian local venison (it tastes superb!)

  2. Is game a popular choice with consumers - do you get a demand for it when then season begins?
    Without a doubt. A lot of customers call in the first week of a certain season to ensure they get the freshest local game available

  3. Is the fact that game is seasonal a positive factor?
    I think so as it increases demand although sometimes I wish the season were longer!

  4. Do you further process game e.g. make pies or sausages?
    Yes, we make Award winning Venison and red wine Sausages and Game pie sometimes too.

  5. Where do you get your game from?
    Mainly Local suppliers but sometimes Yorkshire Game

  6. Can you clarify all types of game you sell?
    Pheasant, venison, pigeon, rabbit, Guinea fowl, wild boar etc.

  7. Do you highlight the source of the game e.g. Pheasant from New Forest, Grouse from North Yorkshire Moors?
    As we use various local estates we tell the customer where it’s from weekly.

  8. Do you offer customers recipes and serving suggestions for your game products?
    Yes

  9. As a butcher what is your favourite game meat and favourite game dish?
    Venison is our favourite and most popular. The steaks and casserole go very well and we also do mail order and deliver Nationwide.

Our restaurant of the month is The Gaggle of Geese pub in the rural village of Buckland Newton. Owners Mark and Emily have taken great care to make this pub a place for the customers to enjoy proper pub food prepared with traceable local produce, in a comfortable, cosy environment – whether you choose a full meal in the dining room or just a drink on the sofa in front of the fire. The menu features a huge variety of locally sourced game, depending on what is in season and pan-fried pigeon bruschetta with black pudding and bacon is his star dish.
